Bacon Avocado Salad

Seasons best in a bowl

Ingredients:

  • 8 Slices of Godshall’s Turkey Bacon
  • 2 Ears of Cooked or Roasted Corn (Leftovers are great)
  • 2 Teaspoons Olive Oil
  • 2 Medium Avocado
  • 8-12 Cherry or Grape Tomatoes
  • ½ Red Onion, diced
  • Juice of One Lime

Instructions:

  1. Dice and brown bacon
  2. Peel and slice avocado very thin
  3. Halve tomatoes
  4. Toss bacon, corn, avocado and tomatoes gently.
  5. Squeeze lime over salad and sprinkle with oil
  6. Serve lightly chilled
  7. ENJOY!
