Bacon Gingersnaps

I package of Godshall’sTurkey or Maple Turkey Bacon (12oz), sliced
1/2 stick butter
1 cup sugar, plus 1/4 cup for dusting
4 tablespoons molasses
1 egg
1 tablespoon real vanilla extract
2 tablespoon freshly grated ginger
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground mace
1/2 teaspoon ground cloves
1/2 teaspoon freshly grated nutmeg

Cut bacon slices into tiny strips and place in a large sauté pan over low heat. Cook gently, stirring occasionally, until all pieces are golden and crispy. . Chop bacon bits into tiny pieces and mix with a 1/4 cup of sugar in a bowl and reserve for later.

Place butter into pan in which bacon was fried and melt scraping all brown bits and flavor into butter then set aside.

combine “bacon butter”, 1 cup of sugar, molasses, egg, and ginger into a bowl and whisk until smooth.

Sift flour with salt, baking soda, and spices, and then add all at once to the wet ingredient mixture. Mix until just combined. Refrigerate until thoroughly chilled.

Preheat oven to 350 degrees F.

Scoop out cookie dough in 1 tablespoon increments, roll in bacon/sugar mixture, and flatten on a parchment paper-lined baking sheet, leaving room for spreading. Bake 8 to 10 minutes, until dark brown. Let cool slightly before removing from baking sheets, and then finish cooling on a rack.
