Bacon Green Pea Soup

Delicious, Healthy and Light

Ingredients:

  • 1 Cup GODSHALL’S Smoky CRUMBLZ
  • 10 Cups of Peas (Fresh or Frozen)
  • 6 Cups Water
  • 1 1/3 Teaspoons Salt
  • 1/4 Teaspoons Black Pepper (Ground)
  • 1/2 Teaspoon Mace (Ground)
  • 2 Whole Cloves
  • 2 Teaspoons Thyme (Dried)
  • 1 Teaspoon Marjoram (Dried)
  • 4 Tablespoons Butter (Unsalted)
  • 4 Green Onions (Chopped)
  • 1/4 lb Fresh Baby Spinach (Chopped)
  • 2 Teaspoons Fresh Mint (Minced)
  • 3 Tablespoons All-purpose Flour

Instructions:

  • Place 8 cups of peas with 4 cups of water in a large sauce pan or Dutch oven.
  • Add salt, pepper, mace, cloves, thyme, and marjoram.
  • Cover and bring to a boil.
  • After brought to a boil, reduce heat and allow to simmer around 45 minutes or until peas are very tender.
  • Drain the peas, keep the liquid in the sauce pan.
  • Puree the peas in a food processor.
  • Then press the pureed peas through a sieve into the leftover liquid in the sauce pan and stir thoroughly.
  • Set aside covered to keep warm.
  • Add the last 2 cups of peas and water in a medium saucepan.
  • Cover and bring to a boil.
  • After brought to a boil, reduce the heat and simmer for approx. 20 to 25 minutes or until peas are tender.
  • While the other peas cook, melt the butter in a sauté pan and sautee the green onions for about 2 minutes.
  • Mix in the spinach and mint and stir together. Cook until the spinach is wilted.
  • Add in the flour and cook for 1 minute.
  • Drain the peas, keep the liquid in the sauce pan.
  • Stir the peas and spinach mixture into the warm soup.
  • Heat again till it begins to simmer.
  • If the soup is too thick, a little at a time, add the remaining liquid from the second set of cooked peas.
  • Season with salt and pepper if needed.
