Summer with a Spice:
Bacon Wrapped Grilled Pineapple with Thai Peanut Sauce
1 Package (12oz.) of Godshall’s Real Wood Smoked Turkey Bacon
1 Cup Peanut Butter
1 Tablespoon Sriracha Hot Sauce
2 Tablespoons Soy Sauce
1/4 Cup fresh mint, diced very fine
2 Tablespoons Tamarind Sauce
Water to add for consistency
4 Bamboo Skewers (soaked overnight)
Cut top & bottom off pineapple.
Cut the skin from the sides of the pineapple.
Cut pineapple down the middle and then into thirds (vertically).
Slice melon down the middle. Repeat.
Remove seeds by carefully cutting out.
Slice melon down to bite sized cubes.
With skewer, poke thru melon, bacon, pineapple, bacon, melon.
Sear bacon & pineapple quickly on grill.
