Fig Espresso Bacon Filled Crêpe

Classic French Cuisine with Sweet n’ Smoky Flavor!

Ingredients:

For the Crêpe:

  • 1 Cup Pancake Mix (Just Add Water Mix)
  • 1 1/4 Cup Water
  • 1 Egg
  • 1/4 Cup Milk
  • 1 Teaspoon Real Vanilla Extract
  • Non-stick Spray (Butter Flavored)

For the Fig Espresso Bacon Filling:

  • 1 Tablespoon Butter
  • 4 Heaping Tablespoons GODSHALL’S Smoky CRUMBLZ or 6 slices Turkey Bacon (Diced Fine and Lightly Browned)
  • 4 Heaping Tablespoons Fig Jam
  • 1 Rounded Tablespoon Cocoa Powder
  • 2 Teaspoons Espresso Powder

Instructions:

For the Crêpe:

  1. First mix a regular batch of pancakes with one cup of just add water pancake mix and 1 1/4 cup of water. Then add the real vanilla extract.
  2. Mix the batter and then whisk in an egg and then the milk.
  3. When this mixture is prepared, spray the bottom of the largest frying pan you can find and put one ladle of the batter into the bottom turning pan to get complete coverage of bottom.
  4. Use a spatula to keep the edges loose and flip to other side when lightly browned.

For the Fig Espresso Bacon Filling:

  1. Place the tablespoon of butter into bottom of small sauce pan. Then add diced bacon lightly browned or GODSHALL’S CRUMBLZ.
  2. Stirring continuously and add espresso powder. Stir for approx. two minutes.
  3. Next, add cocoa and fig jam. Stir for another minute and a half then
  4. Fill the crapes with the mix then fold into quarters and top with melted butter and powdered sugar.
