Hunka Hunka Bacon Cupcakes

Cupcakes
6 Slices of Godshall’s Turkey Bacon
1 Package Chocolate Cake Mix
(water eggs and oil as directed on box)
2 large bananas, very ripe to over ripe.

Filing and Icing
12 Slices of Godshall’s Turkey Bacon
1 cup butter or margarine softened
2 cups room temperature peanut butter
4 cups of Powdered Sugar
¼ cup of Whole Milk
½ tsp vanilla extract

Makes 16 cupcakes

First, fry all bacon (approximately 1 ½ packages) over Medium High in a skillet and then dice finely. Set into three equal bowls.

Make frosting /filling first.
Beat butter or margarine in a medium bowl until fluffy, add and beat in peanut butter, then add 1 cup of the powdered sugar, then add and mix in the milk and vanilla. Then gradually beat in the remainder of the powdered sugar.
Separate into two equal portions.
In one bowl mix in one of the three bowls of bacon until well dispersed through the filling.
Then make the cupcakes, adding the second of the bowls of diced bacon to the mix as well as the two mashed bananas. Mix until well blended and fairly smooth- one minute on medium speed.

Bake the cupcakes as per the box instructions but be ready to add an extra 5-10 minutes due to moisture of the bananas.
Remove and cool.

When Cupcakes can be handled, take a small sharp paring knife and cut a 1 ¾ “ 45 degree, angled circle into the cupcake. When removed, the cut out top should be a conical shape. Cut the bottom off of the “cone”.
With an icing bag filled with the bacon infused filler/icing, squeezed out a 1” diameter ball of filling.

After filling, replace top and ice with smooth peanut butter icing and dip into diced bacon bits.
