A Taste of Key West:
Petite Filets with Bacon and Lime
1 package (12oz.) of Godshall’s Real Wood Smoked Turkey Bacon
6 filets or about 3 pounds of a quality cut of steak at least 3/4 “ thick
3Ž4 cup soy sauce
juice of two limes, zest of one.
1 clove of garlic, crushed
1 whole red pepper
6 bamboo skewers soaked overnight in cool water
Cut pepper,into broad slices 1” or more, remove seeds and sten cut off top curl and bottom, set aside
Combine Lime juice, zest, soy and garlic
Marinate steaks for at least 1/2 hour, 15 minutes each side.
Cut bacon slices horizontally to thickness of steak with about 1/4” to spare
Wrap steaks around edge with bacon slice, compress if steak seems to large in diameter
Close circle of bacon with skewer
Add pepper and another filet
Grill until bacon is toasted and edges nicely crisp
Remove skewer and serve.
