Nouveau Comfort Food:

Turkey Bacon Jam

2 Packages (12oz) Godshall’s Turkey bacon
1/4 Stick of Butter
3 Medium Shallots (diced fine)
1 Clove of Garlic
1/2 Cup Sherry Vinegar
1/2 Cup Apple Cider
1/2 Cup Real Maple Syrup
1/2 Cup Brown Sugar

1. Dice 2 packages of bacon to 1/4 to 3/8 squares, place in pan with non-stick spray and put butter in center of pan. Fry stirring frequently
2. Dice onions or shallots and garlic and add to mixture
3. Add cooking sherry
4. Cover and measure maple syrup and brown sugar, add to mixture and stir to dissolve
5. Add apple cider, stir and cover
6. Turn down to simmer until mixture browns without burning or blackening
7. Remove and scrape all contents to food processor
8. Pulse and scrape sides, repeating until contents achieve a uniform relish consistency
9. Serve on dry toasts
