Turkey Bacon Low
Fat Mini Quiche
9 slices of white or wheat bread
2/3 cup of light cream
1 1/2 cups of frozen spinach (chopped)
7 strips Godshall’s Fully Cooked Turkey Bacon
2 scallions , chopped fine (white and green stalk parts)
1 garlic clove, pressed or chopped fine
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1/2 cup grated fresh part skim mozzarella
1/2 cup Gruyere cheese
1/2 teaspoon parsley
Preheat oven to 375 degrees. Grease a muffin tin liberally with cooking spray.
Using the top of a drinking glass roughly equal to the size of the bottom of the muffin tray indents, cut out a hole in the middle of the bread.
Push the disk of bread into the bottom of each of the 9 indentations of the muffin tray.
Defrost spinach without cooking (apx 2 minutes med-high. Let cool for 5 minutes. Evenly distribute spinach, scallions, garlic and cheeses over the bread bottom crusts
Whisk eggs, cream, salt, pepper and parsley together. Using a ladle, pour egg mixture evenly over the spinach cups, careful not to overflow. Sprinkle bits of bacon on top and bake for 15- 20 minutes.
Cool 5 minutes before serving. a little “deflation” of the tops is to be expected
