New Spark for a Summer Favorite:
Wasabi Bacon Potato Salad
1 lb red potatoes (about 4-5, medium size), cut into 1″ pieces
7 slices of Godshall’s Real Wood Smoked Turkey Bacon browned and diced fine
1/2 cup diced onion or scallions diced fine
3/4 cup mayonnaise
juice from half of a lemon 1
tbsp wasabi 1
tsp salt 1
tsp black pepper
Cut potatoes into ¾” to 1 inch cubes.
Boil potatoes for 10-15 minutes or until a toothpick can be inserted easily.
While the potatoes are cooking,.Juice half of a lemon.
Brown Godshall’s Turkey Bacon and dice.
Dice small onion or similar volume of scallions into small pieces.
Combine mayonnaise, bacon, lemon juice, wasabi, salt, and pepper together until well-mixed.
Drain potatoes and reduce temperature under cold water for a few minutes.
In a large mixing bowl, combine everything together and stir with a spatula.
Refrigerate until serving, garnish with shredded carrots for a colorful side dish that will eat like a main course.
