Smokey, Complex & Delicious:
Bacon BBQ Sauce (for Pulled Chicken)
1 package (12oz) Godshall’s Turkey Bacon, chopped into 1/2” pieces
1 medium onion, finely chopped
2 Tbl garlic, minced or crushed with press
4 plum tomatoes, chopped into 3/8” pieces
4 Tbl Worcestershire sauce
2 cups ketchup or tomato puree
1⁄3 cup apple cider vinegar
3 Tbl dark brown sugar
1 tsp espresso powder
1/4 cup molasses
1/2 cup pure maple syrup
Heat a large pan over medium heat, and add the bacon.
Cook, stirring, until the bacon is only edge browned.
Add the onion,then garlic, tomato, and spice mix and continue cooking, stirring occasionally, for 5 minutes or until the onion begins to soften and bacon browns.
Add the remainder of ingredients, and bring to a simmer.
Simmer for 30 minutes, stirring often; do not allow accumulation on pan edges.
Remove from the stove and allow to cool for 10 minutes, then puree in food processor.
Transfer to a covered container and store in the fridge. Or return to heat and add partially cooked chicken, pulled pork or shredded beef and finish in simmering sauce.
Makes terrific sandwiches.
