Bacon Corn Fritters

Ingredients:

  • 2 Cups Corn
  • 2 Heaping Tablespoons Shredded Coconut (Sweetened or Unsweetened)
  • 1/4 Cup Cornmeal or 1/4 Cup All Flour
  • 1 Teaspoon Paprika
  • 1 Egg
  • 1 Onion (Chopped)
  • 1/2 Cup Parmesan (Grated)
  • Cilantro (Chopped)
  • 1 Tablespoon Lime Juice
  • 1 Tablespoons Oil
  • Sour Cream (For Garnish)
  • Salt (For Taste)
  • Pepper (For Taste)

Instructions:

  1. In a large mixing bowl, combine the corn kernels, shredded coconut, cornmeal or flour, paprika, egg, grated cheese, chopped onion, approx. a handful of chopped cilantro, lime juice.
  2. Heat 1 tablespoon in a frying pan.
  3. Form patties and add to the pan.
  4. Fry until golden brown on both sides. (Approx. 4 minutes per side)
  5. Garnish with desired amount of sour cream.
  6. Serve warm and ENJOY!
