Bacon Wrapped Potatoes with Creamy Lemon Dip
Ingredients:
- 12 oz GODSHALL’S Turkey Bacon (Lightly Browned and Cut in Half)
Salt Black Pepper (F reshly Ground )1/4 Cup Maple Syrup (Plus 1/2 Cup More for Serving) 1/2 Cup Mayo Lemon Zest (1/2 Lemon, Plus 2 Teaspoons Juice) Red Pepper Flakes (Curshed)
Instructions:
- Preheat the oven to 400 degrees F.
- Cook GODSHALL’S Turkey Bacon until lightly browned and cut in half.
- Slice potatoes and toss with 1 teaspoon salt in bowl.
- Lay the turkey bacon strips next to each other and bush with about 1/2 the maple syrup.
- Wrap each potato slice with 1/2 strip of turkey bacon. Place on baking sheet and sprinkle black pepper on top.
- Roast and rotate the baking sheet halfway through, until the bacon is crisp and the potatoes are tender approx. 20 minutes.
- Mix the mayo, some lemon zest and all the lemon juice. Sprinkle the remaining lemon zest on top.
- Put about 1/2 cup maple syrup in a second small serving dish. Mix in desired amount of black pepper and crushed red pepper flakes.
- Serve with the creamy lemon dip and maple syrup dip.
