Breakfast Puff Pastry
Easy & Elegant Breakfast
Ingredients:
- 6 Slices GODSHALL’S Turkey Bacon (Browned and Cut into 1-inch Pieces)
- 4 Large Eggs
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Pepper
- 2 Tablespoons Butter
- 2 Teaspoons Fresh Parsley (Finely Chopped)
- 1 Sheet Frozen Puff Pastry (Thawed)
- 1/2 Cup Packed Fresh Spinach Leaves
- 2 Slices Swiss Cheese (Cut in Half)
- 1/4 lb Sliced Deli Ham
Instructions:
- In a small bowl, whisk 3 eggs with salt and pepper.
- Melt butter in a skillet. Coated evenly.
- Over medium heat, pour them egg mix into the skillet and cook for approx. 2-3 minutes.
- Once the eggs are almost set, stir in the parsley and remove the pan from heat. Place eggs on a large plate, cover and refrigerate until cool.
- Lightly flour a clean surface, to avoid sticking and open up the puff pastry.
- Take last egg and lightly whisk. Use the whisked egg to brush over the puff pastry. Refrigerate the left over egg.
- Take the cooled scrambled eggs and place in the egg washed pastry, 1/2 inch away from edges. Then place the spinach, bacon, cheese and ham on top of the egg.
- Fold over the top of the pastry and crimp edges closed with a fork.
- Take an ungreased baking sheet and place the pastry on it. Cover with plastic wrap and refrigerate for approx. 15 minutes.
- Preheat oven to 400°F.
- Remove pastry from fridge and uncover. Use the left over whisked egg and brush onto the top of the pastry.
- Bake till golden brown, usually takes approx. 25-30 minutes. Let cool for approx. 5 minutes.
