A Taste of Key West
Ingredients:
- 1 Package (12oz.) of GODSHALL'S Real Wood Smoked Turkey Bacon
- 6 Filets or about 3 pounds of a quality cut of steak at least 3/4 “ thick
- 3/4 Cup Soy Sauce
- Juice of 2 Limes (Zest of One)
- 1 Clove of Garlic (Crushed)
- 1 Whole Red Pepper
- 6 Bamboo Skewers Soaked Overnight in Cool Water
Instructions:
- Cut pepper,into broad slices 1” or more, remove seeds and stem cut off top curl and bottom, set aside
- Combine Lime juice, zest, soy and garlic
- Marinate steaks for at least 1/2 hour, 15 minutes each side.
- Cut bacon slices horizontally to thickness of steak with about 1/4” to spare
- Wrap steaks around edge with bacon slice, compress if steak seems to large in diameter
- Close circle of bacon with skewer
- Add pepper and another filet
- Grill until bacon is toasted and edges nicely crisp
- Remove skewer and serve.
