Ingredients
- 4 slices Godshall’s Turkey Bacon
- 1 boneless, skinless chicken breast
- 2 slices sharp cheddar cheese
- 1/2 apple, sliced thin
- 1 bunch fresh thyme
- 2 tablespoon prepared honey mustard spread (such as Sweet Baby Ray’s)
- 4 slices of bread
- Olive oil
- Salt
- Freshly ground pepper
Instructions
- Slice the chicken breast in half lengthwise, and season with salt and pepper then set aside.
- Cook the bacon in a pan on medium heat until crisp, flipping to brown both sides. Remove from the pan and set aside.
- Add the sliced apples to the pan, with a pinch of salt, a few grinds of fresh pepper and thyme leaves from 3 to 4 sprigs. Cook about 3 to 4 minutes until soft. Remove the apples and set aside.
- Add a little oil to the pan and allow to heat for a minute. Add the chicken breast pieces, and cook about 3 minutes each side, ensuring the chicken is cooked through.
- Begin sandwich assembly to make two sandwiches, by spreading the honey mustard mixture on one side of all 4 slices. Top two slices with a piece of chicken. Add a cheddar cheese slice on top of each chicken piece. Add the cooked apples evenly on top of the cheese slices. Top each sandwich with 2 slices of bacon per sandwich. Top with the remaining slices of bread.
