Love At First Bite:

Reduced Sugar Bacon Pecan Pie

6 slices of Godshall’s Maple Turkey Bacon ( or Chicken or Turkey bacon) diced very fine
3/4 stick butter
3/4 cups light brown sugar
4 tablespoons Splenda or Equal or similar sugar substitute
1 oz, (3/4 shot bourbon or 1 oz strong coffee
2 teaspoons pure vanilla extract
1 teaspoon grated orange zest
1/4 teaspoon salt
3/4 cup agave nectar
3 large eggs
2 cups pecan halves (1/2 pound)
1  prepared pie crust

Preheat the oven to 350 degrees.

Melt the butter in a saucepan over medium heat.

When melted, add the brown sugar and sugar substitute.

Gently whisk until  dissolved.

Remove from heat and whisk in vanilla, bourbon or coffee, agave, orange zest and salt.

In a medium large bowl, whisk eggs then whisk in the butter and sugar mixture.

Scatter the cooked (browned) , finely diced bacon evenly across the bottom of the pie crust then scatter the pecans across the bottom on top of the bacon.

Pour the liquid mixture over the pecans and bacon.

Place on a hot baking sheet and place in oven for 45 to 50 minutes or until the center is set.

After removing from the oven, allow to cool for one hour.

Top slice with light whipped cream and serve.
