With Turkey Bacon Jam:

Turkey Bacon Latkes


1 pound of cooked turkey bacon, diced
1 cup of mashed potatoes
.25 cup of finely chopped shallots
½ medium white onion, diced
1.5 pounds of russet potatoes, peeled and grated
2 large eggs lightly beaten
2 tablespoons of all purpose flour
Salt and pepper
Vegetable Oil for Frying


Rinse grated potatoes with water and then place grated potatoes on papercloth to dry before using
Mix egg, flour, shallots and season with salt and pepper to taste
Add Mashed potatoes, turkey and combine, season again with salt and pepper
Work mixture into roughly 3” round discs
Then coat discs with grated potatoes

Add vegetable oil to pan over medium high heat
When sizzling, drop disc of mixture carefully into hot oil and sauté for 3 to 4 minutes on each side – latkes should be golden brown and crisp on outside.

Plate lakte on plate and spoon Turkey Bacon Chutney next to latkes and serve right away.
