Ingredients
- 10 slices Godshall’s Peppered Beef Bacon
- 6 flour tortillas
- 6 large eggs
- 2 tablespoons heavy cream
- 1/2 cup cheddar cheese, shredded
- 2 avocados, diced
- 1 tablespoon butter
- salt and pepper
- salsa and cilantro to serve
Instructions
- Preheat the oven to 400°F. Arrange the bacon in a single layer on a rack placed over a baking sheet. Bake for about 15 minutes or until cooked and crispy. Transfer the bacon to a plate lined with a paper towel to absorb any grease.
- Crack the eggs into a bowl and add the heavy cream. Whisk together until combined. In a skillet set at medium heat, melt the butter and then pour in the egg mixture and scramble until the eggs are cooked and set.
- Heat the tortillas by placing in a warm skillet for a minute, flipping over once.
- Divide the eggs, the cheese, diced avocado and salsa over the tortillas. Add 2 slices of bacon each, and salt & pepper to taste. Finish with a sprinkle of cilantro before serving.
