Breakfast Tacos with Peppered Beef Bacon and Egg

Ingredients

  • 10 slices Godshall’s Peppered Beef Bacon
  • 6 flour tortillas
  • 6 large eggs
  • 2 tablespoons heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 2 avocados, diced
  • 1 tablespoon butter
  • salt and pepper
  • salsa and cilantro to serve

Instructions

  1. Preheat the oven to 400°F. Arrange the bacon in a single layer on a rack placed over a baking sheet. Bake for about 15 minutes or until cooked and crispy. Transfer the bacon to a plate lined with a paper towel to absorb any grease.
  2. Crack the eggs into a bowl and add the heavy cream. Whisk together until combined. In a skillet set at medium heat, melt the butter and then pour in the egg mixture and scramble until the eggs are cooked and set.
  3. Heat the tortillas by placing in a warm skillet for a minute, flipping over once.
  4. Divide the eggs, the cheese, diced avocado and salsa over the tortillas. Add 2 slices of bacon each, and salt & pepper to taste. Finish with a sprinkle of cilantro before serving.
