Chicken Bacon Tomato and Avocado Flatbread

Ingredients

  • 4 slices Godshall’s Chicken Bacon, chopped
  • 1 naan bread
  • 1 tablespoon Olive Oil
  • 12 cherry tomatoes
  • 2 avocados
  • 1 scallion
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 375°F. Place naan bread on a parchment-lined baking sheet. Brush the naan with olive oil and place in the oven for 5-6 minutes to heat thoroughly.
  2. Place the chopped bacon into a frying pan and cook until crispy. Set aside on a paper towel when done.
  3. Peel and remove the seeds from the 2 avocados. Mash 1 avocado in a bowl with a fork, and cut the other avocado into chunks.
  4. Halve the cherry tomatoes and cut the scallion into thin slices.
  5. Spread the mashed avocado on the naan bread, then top with the cherry tomatoes, the chicken bacon pieces, and finally the avocado chunks. Season with salt & pepper and serve.
