Ingredients
- 4 slices Godshall’s Chicken Bacon, chopped
- 1 naan bread
- 1 tablespoon Olive Oil
- 12 cherry tomatoes
- 2 avocados
- 1 scallion
- 1/4 teaspoon sea salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375°F. Place naan bread on a parchment-lined baking sheet. Brush the naan with olive oil and place in the oven for 5-6 minutes to heat thoroughly.
- Place the chopped bacon into a frying pan and cook until crispy. Set aside on a paper towel when done.
- Peel and remove the seeds from the 2 avocados. Mash 1 avocado in a bowl with a fork, and cut the other avocado into chunks.
- Halve the cherry tomatoes and cut the scallion into thin slices.
- Spread the mashed avocado on the naan bread, then top with the cherry tomatoes, the chicken bacon pieces, and finally the avocado chunks. Season with salt & pepper and serve.
