Ingredients
- 6 slices Godshall’s Beef Bacon, chopped into 1/2” pieces
- 1/4 cup apple cider vinegar
- 1lb Yukon gold potatoes, peeled & cut into 1/2” cubes
- 2 red bell peppers, cut into 1/2” pieces
- 1 medium red onion, diced
- 8 ears of husked corn, kernels cut off
- 1/4 tsp crushed red pepper
- salt
Instructions
- Cook the bacon in a skillet on medium heat until crispy, about 8 minutes. Transfer to a plate lined with paper towels.
- Add the potatoes and cook about 5 minutes until browned. Add the peppers and corn and continue to cook another 5 minutes.
- Put all the vegetables into a large bowl, and stir in the onion, apple cider vinegar, red pepper flakes and bacon. Salt to taste.
