Black and Blue Beef Bacon Wrap

Ingredients

  • 3 strips Godshall’s Beef Bacon
  • 4 Portabella mushrooms
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 oz roasted red pepper
  • 1 oz Blue cheese
  • 4 leaves Boston Bibb lettuce
  • 1 tortilla
  • 1 oz Blue Cheese dressing

Instructions

  1. Prepare your mushrooms by removing the stems, scooping out the gills, and tossing in olive oil and balsamic vinegar. Place on a parchment-lined and greased sheet pan, and bake at 350°F for 20 minutes or until softened.
  2. Cook the Beef Bacon and set aside.
  3. Slice your cooled mushrooms and roasted red peppers.
  4. Place the tortilla and spread on the blue cheese dressing, layer in the lettuce, the mushrooms, roasted red pepper, blue cheese, and the beef bacon.
  5. Wrap and serve.
