Black and Blue Beef Bacon Wrap


  • 3 strips Godshall’s Beef Bacon
  • 4 Portabella Mushrooms
  • 4 tablespoons  Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • 2 ounces Roasted Red Pepper
  • 1 ounce  Blue Cheese
  • 4 leaves Boston Bibb Lettuce
  • 1 Tortilla
  • 1 ounce Blue Cheese Dressing


Prepare your mushrooms by removing the stem, scooping out the gills, tossing in olive oil and balsamic vinegar. Place on a parchment lined and grease sheet pan and bake at 350°F for 20 minutes or until softened.

Cook the beef bacon and set aside. Slice your cooled mushrooms and Roasted Red Peppers.

Lay down the tortilla and spread on the blue cheese dressing, layer in the lettuce, the mushrooms, roasted red pepper, blue cheese and the beef bacon. Wrap and serve.
