Ingredients
- 3 strips Godshall’s Beef Bacon
- 4 Portabella mushrooms
- 4 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 oz roasted red pepper
- 1 oz Blue cheese
- 4 leaves Boston Bibb lettuce
- 1 tortilla
- 1 oz Blue Cheese dressing
Instructions
- Prepare your mushrooms by removing the stems, scooping out the gills, and tossing in olive oil and balsamic vinegar. Place on a parchment-lined and greased sheet pan, and bake at 350°F for 20 minutes or until softened.
- Cook the Beef Bacon and set aside.
- Slice your cooled mushrooms and roasted red peppers.
- Place the tortilla and spread on the blue cheese dressing, layer in the lettuce, the mushrooms, roasted red pepper, blue cheese, and the beef bacon.
- Wrap and serve.
