Trim and peel the carrots. (Leaving the stems is optional for appearance)
Wrap each carrot with one piece of bacon, spiraling down from top to bottom and place on baking sheet. Sprinkle with paprika and place in the oven.
After 20 minutes baste with the maple syrup or hot honey and continue baking for 20 to 25 minutes. Bacon should be crispy. Remove from the oven. Serve with chopped parsley or thyme leaves as garnish.
