Ingredients
- 2 packs Godshall’s Beef Bacon, chopped
- 1 lb fingerling potatoes, boiled
- 8 oz butter
- ½ cup broccoli, steamed and chopped
- ½ cup Cheddar cheese
- 2 tablespoons hot sauce
- 1 tablespoon honey
- 2 tablespoons Adobo seasoning
- 1 tablespoon Mesquite steak seasoning
- 1 tablespoon thyme
- 1 tablespoon sage
- Salt and pepper to taste
- 2 eggs, over easy
Instructions
- Chop, boil, and cool the fingerling potatoes.
- In a pan, cook the chopped Beef Bacon and set it aside. Using the rendered fat and butter, add in the potatoes, adobo, mesquite, herbs, and sauté until the potatoes get crispy.
- Once crispy, keep the heat low, toss in the bacon, cheddar, salt and pepper, broccoli, hot sauce, and honey.
- Place in a bowl and top with the over-easy eggs.
