Ingredients
- 1 Package Godshall’s Beef Bacon
- 2 2/3 Cups All Purpose Flour
- 2 2/3 Cups Cake Flour
- 1 Cup + 3 Tbsp Sugar
- 2 Tsp Fine Salt
- 1/2 Tsp Baking Powder
- 1 Lb European Style Butter (80% or higher butterfat), Cold
- 2 Tsp Fresh Lemon Juice
- Zest of 4 Lemons
Instructions
Prep:
- Cook Godshall’s Beef Bacon in 400o F oven for 20 minutes, until crispy. Cool and mince into bacon bits.
- Cut butter into ¼-inch cubes and return to refrigerator until ready to use.
Assemble & Rest:
- In a large mixing bowl, combine dry ingredients with a whisk or mixer until fully incorporated.
- Add Lemon Juice, Lemon Zest, half of Godshall’s Beef Bacon bits, and the cold Butter cubes.
- Mix at low speed until the dough comes together. Note: It will take a while until you get a dough ball.
- Cover bowl and refrigerate for a minimum of four hours, preferably overnight, to allow dry ingredients to become fully hydrated.
Bake:
- Preheat oven to 340o F.
- Roll out the dough to ½-inch thickness; work quickly to avoid butter getting soft.
- Cut cookies into 2-inch squares and place them on room temperature cookie sheet with parchment. Allow one inch between cookies for baking.
- Top cookies with remaining Godshall’s Beef Bacon bits.
- Bake for 20 minutes.
- Cool on a wire rack for 5 minutes, then sprinkle a light coating of Baker’s Sugar on top.
- Cool completely, then store in an airtight container for up to 7 days.
