Chicken Bacon Gruyere and Spinach Egg Bites

Ingredients

  • 6 slices Godshall’s Chicken Bacon
  • 8 large eggs
  • 1 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 cup chopped spinach
  • 2/3 cup shredded Gruyère cheese
  • 1/2 cup whole milk
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F. Prepare a 12-cup muffin pan by coating with cooking spray.
  2. In a skillet on medium heat, cook the bacon until crisp, about 6 to 8 minutes, flipping once half-way through. Transfer the bacon to a plate lined with a paper towel.
  3. In a bowl, whisk eggs, milk, salt, and white pepper until smooth. Chop the bacon into small pieces.
  4. Evenly distribute half of the cut bacon into all 12 muffin cups. Then evenly distribute half of the Gruyère on top of the bacon in each cup, followed by an even distribution of all the chopped spinach.
  5. Pour egg mixture evenly into each muffin cup until about about 3/4 full.
  6. Add the rest of the cheese and chicken bacon to the top of each muffin cup and bake 18-20 minutes until the egg mixture is set.
  7. Serve warm and Enjoy!
