Ingredients
- 1 pack Godshall’s Turkey Bacon
- 5 peaches (cut in half & grilled, divided)
- 1 cup pecans (candied)
- 3 cups spinach
- 1 wedge Merlot Cheddar (cubed)
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- Salt and pepper, to taste
- 1 tablespoon lemon juice
Instructions
- Cook the bacon and chop or dice it.
- Slice up the grilled peaches (set aside one) and mix with the spinach, cheese cubes, and pecans.
- In a blender, add the apple cider vinegar, the remaining peach, olive oil, salt, pepper, lemon juice.
- Blend until emulsified and pour over the salad.
- Dig in and enjoy this flavorful and refreshing salad!
