Beef Bacon Gyro

Ingredients

  • 12 strips Godshall’s Beef Bacon
  • 1/2 red onion, sliced paper thin
  • 1-1/2 cups cucumber, sliced thin, or diced
  • 1/2 cup Greek yogurt
  • 2 pitas or naans
  • Basil and dill, for garnish

Optional (for added crunch):

  • 2 Roma tomatoes, sliced 1/4 thick
  • 2 cups shredded red cabbage
  • 1/2 bunch of parsley, roughly chopped
  • 1/2 bunch of cilantro, roughly chopped
  • Juice of 1 lemon
  • 1 teaspoon salt

Instructions

  1. Cook Godshall’s Beef Bacon over medium heat until you’ve reached the desired doneness.
  2. Meanwhile, warm the naans over the grill or in the oven.
  3. Take the warm naans and spread the yogurt down the middle and place the onion and cucumber slices over it.
  4. For added crunch, use the optional ingredients: Mix the red cabbage with the cilantro, parsley, lemon, and salt.
  5. Place the cabbage on top of the yogurt, then add the tomatoes, cucumbers, and onions.
  6. Top with Godshall’s Beef Bacon, garnish with herbs and fold over.
  7. Enjoy!
