Ingredients
- 2 packs Godshall’s Beef Bacon (some wider slices will yield 2 strips for wrapping)
- 1 package cornbread mix (15 oz) – required ingredients listed on package may vary slightly
- 2/3 cup milk
- 1/3 cup butter, melted
- 1 egg
- 1 cup sharp cheddar cheese
- 8 oz can of sweet corn, cream style, slightly drained of free liquid
- ¼ teaspoon cayenne pepper (optional)
Instructions
- Preheat oven to 375° F.
- Mix cornbread ingredients according to package instructions.
- Stir in the cheddar cheese and bake for 25-30 minutes, or until a wooden toothpick inserted in the center comes out clean.
- Remove and place on wire rack to cool for 5-10 minutes.
- Use a stick blender to mash the sweet corn.
- Transfer cornbread into large bowl and mix in the sweet corn.
- To spice it up, add ¼ teaspoon of cayenne pepper (optional).
- Cook bacon as per package instructions. Place on paper towels.
- While bacon is cooking, form ~1-½” diameter balls from cornbread mixture using an ice cream scoop or a spoon; place on lined baking sheet air fryer basket/tray.
- Bake cornbread bites in air fryer or 425o F oven for 5-8 minutes, until they are slightly browned and form a thin crust. You can also make the cornbread ahead of time and refrigerate the balls. Make sure you adjust the air frying/baking time to 10-12 minutes, to allow for the bites to heat through, if they were refrigerated.
- Wrap beef bacon slices around the warm cornbread bites and secure with toothpicks.Serve and enjoy!
