Ingredients
- 2 teaspoons olive oil
- 1/2 clove garlic, sliced thin
- 8 oz fresh spinach
- 4 eggs (beaten)
- 1/4 cup shredded cheddar cheese
- 1 Roma tomato, sliced
- 4 strips Godshall’s All Natural Uncured Turkey Bacon
- 1 jalapeño, sliced
- 2 flour tortillas
- 1 tablespoon butter
- 1/2 teaspoon salt
Instructions
- Cook the slices of Godshall’s All Natural Uncured Turkey Bacon until desired doneness. Set aside on a paper towel.
- Warm a sauté pan on medium high heat, add olive oil and garlic.
- When garlic starts to turn gold around the edges, add fresh spinach and 1/4 teaspoon salt. Turn off the heat, stir, and allow spinach to wilt slowly. Set spinach aside.
- In a non-stick pan, melt butter. When totally melted, add eggs, remaining salt, and stir to scramble.
- Warm the tortillas in the microwave for 20 seconds.
- Take tortillas out and add scrambled eggs, cheddar cheese, spinach, and tomato in the middle.
- Add two slices of Godshall’s All Natural Uncured Turkey Bacon to each, and top with fresh jalapeños.
- Roll the tortillas around the ingredients and serve.
